DAE notice the difference between shaking the basket and actually flipping? I ruined 2 batches of wings figuring this out
So I made wings in my air fryer 3 times in one weekend trying to get them right, and the first two batches came out soggy on the bottom. I was doing the usual shake the basket thing at the 10 minute mark like everyone says. Then a buddy who cooks at a bar in Sacramento told me to pull each wing out with tongs and flip it over instead. Total game changer. The shake just moves them around, so the same spots stay against the metal and never crisp up. When you flip them, that bottom crust gets a turn in the hot air and you get that crunch on both sides. Third batch came out with actual crispy skin all around, and the only thing I changed was flipping at 10 minutes and again at 16. Cost me nothing but an extra 30 seconds of work. Has anyone else tried flipping vs shaking, or am I just late to something everybody already knows?
