Oven roasting is dead to me. Air frying veggies is the new standard.

My roasted potatoes from last night were still super crispy though. Maybe your oven runs cold?

Hmm... I read that air fryers just cook veggies faster for more crisp. @vera_adams might have a point about oven heat though.
