Pro tip: I read on a food science blog that air fryers can actually dehydrate herbs better than my oven did at 200 degrees.
I tried it with a bunch of rosemary from my garden and it was perfectly crisp in 20 minutes, so has anyone else used theirs for stuff beyond just cooking food?

I get the citrus slice thing, but honestly I find the air fryer too harsh for that. It can make them brittle and cook the edges before the middle dries. I had better luck with my oven on the lowest setting with the door cracked open. For herbs though, you're totally right, it's a game changer.

Honestly, why stop at herbs? I dry citrus slices in mine for cocktails or potpourri. It works way faster than letting them sit out for days.

Citrus slices get too brittle." Try a lower temp and shorter time. I do thin lemon wheels at 150 for about 10 minutes and they come out perfect.
