Update: I've seen a lot of people say you should always shake the basket halfway through cooking, but after testing it on 50+ batches of fries, I found that just leaving them alone gives a crispier, more even cook.

What's your take on the shake vs. no-shake method for things like fries or veggies?

Totally agree with @palmer.val about the bacon thing, it's the same idea. Just let the food do its thing.

Honestly that whole shake thing feels like a life lesson in not messing with a good process. People get so nervous about leaving things alone, they have to poke and stir and check. Fries need to just sit there and get hot, same as letting paint dry or waiting for glue to set. Constant checking just ruins the result because you break the contact that's actually cooking the food. It's a trust thing with the machine and the timing.

That shake method always felt wrong for fries. It's like when you move bacon around too much in the pan and it never gets that perfect crisp. The food needs to sit and make contact with the hot surface. For veggies, maybe shaking works if they're wet, like zucchini. But for potatoes, leaving them alone lets the steam escape upward instead of getting trapped underneath when you jostle them.
