Vent: My dad told me to pat wings dry before air frying, I thought he was nuts

He kept saying moisture is the enemy of crisp skin... I figured a little water wouldn't matter. After three batches of soggy wings last Sunday I finally tried his way. Dabbed them with paper towels, let them sit for ten minutes, then tossed them in the basket. Came out way crunchier than anything I'd made before... guess he knew what he was talking about. Anyone else have family advice they blew off at first?

Bro for real your dad was 100% right. Moisture is the enemy of crispy anything in an air fryer, it just steams instead of crisps. I'd add that you gotta pat them dry AND then toss them in a little bit of baking powder with your seasoning, that helps pull out even more moisture and gives that extra crunch. Also if you have time let them sit uncovered in the fridge for like an hour before cooking, that dries the skin out even more. Never skip the drying step again.
