Was always team "dry rub only" for wings until I heard a dude at a tailgate swear by a baking powder trick
He said it dries out the skin way better than any rub can, so I tried tossing my wings in a teaspoon of baking powder per pound before air frying at 380. Total game changer, the skin comes out shattery loud crispy. Anybody else convert to a weird method after someone random convinced you?

Did the guy also have a secret recipe involving a shoe and a bottle of ketchup? Baking powder sounds wild, I would have thought it would leave some weird aftertaste. But I guess if it works it works, I've been converted by weirder advice from strangers before.
