My uncle told me to ignore the recipe and go by feel... he was right about pancakes
I used to follow pancake recipes to the letter, measuring every cup and spoonful. My uncle Bob watched me one Saturday morning and said "you're overthinking it, the batter should look lumpy and dry." I thought he was crazy so I kept doing my own thing for months. Finally tried his method last weekend and the pancakes came out way fluffier and better textured. Anyone else had family give them cooking advice that actually worked against what the recipe says?

My neighbor told me the same thing about adding lemon juice to get fluffier pancakes and she was totally RIGHT.

Read an article in Cook's Illustrated that said gluten development is the enemy of fluffy pancakes. Overmixing makes them tough rubbery things. Your uncle's lumpy dry batter method lets the gluten rest more and works better every time.
