TIL I was overfolding my pastry dough for like 2 years

I was at a brunch spot in Chicago last month and the head baker watched me fold my dough once and just goes 'dude you're killing all the layers'. Turns out I was pressing way too hard and overworking it every single time, basically making tough bread instead of flaky stuff. Any other line cooks or bakers realize they were doing some basic thing completely backwards for way too long?

You ever notice how most people are doing some everyday thing way wrong just because nobody ever told them? I was 25 before someone showed me I was holding a knife totally backwards for chopping. It's like we all pick up bad habits somewhere and just roll with them for years. Makes you wonder how many other little things in life we're messing up without knowing.

Is it possible that the way we're all slicing up our days is just as messed up as how we chop onions and nobody stops to question it?
