Walked into a diner in Tucson and the waitress had a system

Stopped at this old diner off I-10 last week called the Dusty Boot. Waitress took orders on a napkin with a pen behind her ear, never wrote down a single drink. How do these old school servers remember everything without a ticket?

She wrote on a napkin but never wrote down the drinks. That is a skill you just don't see anymore. I think those older servers use a kind of mental map. They associate each face with a specific order and never break that chain. It is impressive but also a little scary if they get it wrong.

That's rough, Brian. I've seen waitstaff forget orders entirely and it makes the whole meal awkward for everyone.
