Warning: I argued for 3 years that sourdough starter needs daily feeding, then a baker in Austin showed me her fridge jar
I was killing myself feeding that jar every morning at 7am before work because some video in 2021 said daily was the only real way. She pulled out a starter that had been in her fridge untouched for 9 days and it doubled in 4 hours, no problem. So what's the longest you've gone between feedings and still gotten a good rise?
How long was your jar actually sitting there though? I used to do the same thing, panic feeding every single day because I read somewhere that skipping would kill it. Then I got lazy one week and left mine in the fridge for 11 days. Pulled it out, fed it, and it was bubbling like crazy within 5 hours. The cold slows everything down so the yeast just chills out and waits. Now I feed mine once a week at most and it bakes great every time.
