My lunch disaster turned into the best meal I ever had
I was parked at a truck stop in Nebraska, opened my cooler, and found my sandwich had slid into a puddle of melted ice. Everything was soggy and ruined. I was so mad I almost just ate a bag of chips. Then I walked into the diner attached to the stop, ordered the daily special (meatloaf with gravy and mashed potatoes), and it was incredible. Has anyone else had a bad meal turn into something way better by accident?

Wait, was the diner meatloaf something you'd normally order or did you just take a chance on it because you were so frustrated? I gotta know if that random decision making is what made it taste so good. Like, maybe the soggy sandwich was a sign from the universe to try something new. That Nebraska diner meatloaf sounds like the kind of comfort food that hits different when you're already hangry and all hope seems lost. Did the gravy have that homemade taste or was it from a packet?

You ever have one of those days where everything goes wrong but it turns out perfect? Happened to me in a little diner outside Tulsa. My tire blew out on the highway, got stuck for hours, finally limped into this place that looked like it hadn't been updated since the 70s. Ordered the meatloaf special just because it was cheap and I was too tired to care. That meatloaf was life changing. Had this smoky, almost bacon-y taste mixed into the meat, and the mashed potatoes had real butter chunks you could see. Been chasing that meal ever since, never found anything close.
