Can we talk about people overmixing their cupcake batter

I swear every time I see someone in a video or at a shop they're beating the crap out of their batter until it's super smooth. Took me like 4 batches of dense hockey pucks before my grandma finally told me to stop once the flour just disappears. Now I fold it by hand and my cupcakes actually come out fluffy instead of chewy. Has anyone else had to unlearn that aggressive mixing habit?

My grandma gave me the same talk after I brought her a batch of my "signature" doorstops. She grabbed my hand, showed me how to fold in the flour with a rubber spatula. Ten gentle turns, tops. The lightest, fluffiest cupcakes I've ever made. Now I stop mixing the second I don't see any more white streaks. No more beating. Just folding. Game changer for me too.

My friend Sarah thought she was being thorough. Beating that batter like it owed her money. She ended up with these sad little bricks that barely rose. Her kids wouldn't even eat them. Took her forever to learn that gentle folding was the secret.
