Finally figured out why my sourdough was so dense...
For about 6 months I was fighting with loaves that just wouldn't rise right. Tried different flours, warmer water, longer proof times... nothing worked. Then last Tuesday I realized my starter wasn't actually doubling in size before I used it. I was just waiting 4 hours and assuming it was ready. Now I wait until it passes the float test and my crumb is way more open. Anyone else have a stupid simple fix like this that took way too long to figure out?

Ha, yeah I read somewhere that people overthink feeding schedules but skip the float test.

Oh come on, it's not that deep. If the bread floats it floats, if it sinks it sinks. I did the float test once and my dough sank like a rock but it still baked up fine. People act like you ruined Thanksgiving if your starter doesn't pass some Pinterest checklist.
