Had a killer day at the bakery last Saturday - sold out of everything by 11am

I usually do about 60 loaves for the farmers market in Decatur, but last weekend I pushed it to 85 and they were gone before noon. My sourdough with toasted sesame on top finally got the crust right after about 12 tries using that new baking steel. Has anyone else hit a random sales spike like that and had to figure out how to scale up fast?

That's such a great problem to have though. I've started noticing this little pattern where once you get one thing just right like that sesame crust it kind of unlocks a whole new level of interest. It's like people can tell when you've really dialed in a recipe and word just spreads. Same thing happened with my neighbor who makes jam, she tweaked her strawberry recipe and suddenly she couldn't keep up with orders from people she'd never even met. Scaling up fast is always the tricky part. Maybe you could start taking pre-orders online for the next market just to get a better handle on the numbers?

Totally agree, that "once you get one thing just right" part really hit home for me too with my focaccia recipe.
