I thought weighing flour was fussy nonsense, then my sister in Cincinnati handed me her $12 scale
For 8 years I scooped flour straight from the bag with a measuring cup and swore my cakes were fine. My sister in Cincinnati kept telling me to weigh it, and I kept saying a scale was for people with too much time on their hands. She finally just left her $12 scale on my counter when she visited in March. First cake I made with it came out the same height on all sides, and it wasn't dry at the edges for once. Turns out I was packing in anywhere from 20 to 40 extra grams per cup depending on how deep I dug the scoop. I went back and made my old chocolate cake recipe both ways and the scoop version was denser and a little gummy. Now the scale lives on my counter and I do everything in grams, even butter. Do you all weigh or scoop, and did anyone else fight it as long as I did?
