Wait, how were you weighing it before? I feel like a lot of home bakers get way too stressed about the scale. If your stuff tasted good for years, the method was working. A scale is just one tool, not the only rule.

Your stuff tasted good for years"? You were just eyeballing cups of flour for years and it worked? My last loaf would have been a doorstop if I tried that.

Honestly, the scoop-and-sweep method can be super inconsistent, that's probably where the weight went off. I used to do the same thing until I realized my "cup" could vary by like 20 grams depending on how I packed it. A cheap digital scale changed everything for consistency, especially with big batches. If it was working for you before, you were probably just accidentally consistent with your own bad method. Now you can be actually consistent on purpose.
