Well, that's a tough lesson to learn. I used to beat my dough into submission and ended up with tough, dense bread every time. Let it rest and handle it gently, you'll be amazed at the difference in texture.

Oh gosh, my neighbor tried that tough love approach with her sourdough once... kept punching it down like it owed her money. She finally broke down and tried the gentle fold method and her loaves came out so light and airy she nearly cried. Kinda makes you wonder why we overcomplicate things when the dough just wants to be left alone.
