Actually, waiting an hour feels like a waste of good bread. That first hot slice with melting butter is the whole point of baking it yourself. The texture is softer, and the smell is amazing right out of the oven. Who cares if the crumb is a little gummy when it tastes that good?

Love how waiting for bread to cool teaches patience, @ninasingh. It's like my sourdough starter needing that full 12 hours to really develop its tang. You see the same thing with stews or chili, where sitting overnight makes all the difference. Good stuff just needs time to come together right.

My last loaf was a test of patience I totally failed. I cut into it after maybe ten minutes because the smell was driving me crazy. Ended up with a warm, doughy brick that I still ate every piece of. Sometimes the lesson is that you have no self control, you know?
