PSA: My $85 digital scale from a kitchen supply store in Portland saved my sourdough
I was having a real bad run with my loaves being too dense for weeks... turns out my old spring scale was off by almost 20 grams on flour. The new one is dead on, and my crumb is perfect now. Anyone else find one tool that fixed a long-running problem?

Twenty grams is a huge difference for flour.

My last loaf was dense as a brick because I was off by about 15 grams. I started weighing my flour instead of using cups and it fixed everything.

Tell me about it, @the_hannah. I had the same brick problem for months. A kitchen scale was a total game changer for my baking. Those little differences in how you scoop flour add up so fast. It feels like a small step but it makes the biggest difference in how your bread turns out. I won't even look at a cup measure for flour now, lol.
