Question about switching from a stand mixer to hand kneading for sandwich bread
I've been baking sandwich bread for about 3 years now and always used my KitchenAid stand mixer with the dough hook. Last month my mixer died mid batch and I had to finish 2 loaves by hand, and honestly the crumb came out way better. I was shocked because I always heard hand kneading takes forever and is inconsistent. Now I've done 6 batches by hand and the dough is softer and rises more evenly, but my arms are killing me. I'm wondering if I should just fix the mixer or commit to hand kneading full time. Does anyone else here knead by hand for sandwich loaves, and how long do you usually go at it?
Have you tried resting the dough for 10 or 15 minutes right after mixing? That lets the flour soak up the water and the gluten starts forming on its own, so you only have to knead for like 5 to 8 minutes instead of 15. My arms thanked me big time once I figured that out.
