That little old lady at the farmers market who knew my starter was off

I was selling sourdough at the Portland Farmers Market last Saturday, and this older woman picked up a loaf, sniffed it, and said 'your starter needs feeding, it's gone a bit sharp'. She was right, I had pushed it two hours too long. How do you folks deal with customers who know more than you do about your own bake?

Used to think it was embarrassing when a customer called me out like that, but honestly it changed my whole outlook. That little old lady probably saved me from a bunch of returns or bad reviews. Now I actually ask regulars for feedback on the tanginess and adjust my feeding schedule based on what they tell me. It's humbling but it makes the bread better in the end.
