The bench scraper demo at the Williams-Sonoma in Columbus finally made dough handling click for me
I was killing time in the Easton Town Center mall last Saturday waiting for my wife to finish shopping, and I wandered into the Williams-Sonoma just to look at pans. There was a woman working there doing a little demo on folding croissant dough and she had this bench scraper she kept using, not just for cutting but for scooping and lifting the whole slab off the counter. I've had a scraper in my drawer for like 3 years and honestly only ever used it to chop cold butter into flour. She showed me how to use the flat edge to push a sticky wet dough around without adding extra flour, and how the whole thing keeps your hands from getting caked. I went home and tried it with my usual 75 percent hydration focaccia and it was a night and day difference, way less mess and the dough kept its shape instead of spreading out everywhere. Never really thought of a $6 tool as something that changes how you work but here I am. Does anyone else use their bench scraper for stuff besides cutting, or am I the last one to figure this out?
