My brother-in-law insisted I should always weigh my flour, not scoop it. I finally tried it on a batch of chocolate chip cookies.

So did it actually make a difference in how the cookies turned out? Weighing is way more exact because how much flour you pack into a cup can change everything... my cookies used to be all over the place until I started using a scale. It just takes the guesswork out and they come out the same every single time.

Right? Once you start weighing, how do you even go back to cups? @leoward is totally right about the flour, but it's the same for brown sugar. Do you pack it hard or just drop it in? That changes the moisture so much. My first batches were either puddles or rocks before I got a scale. It feels like a whole different kind of baking when you know the numbers are exact.
