My grandma’s quick bread tip made me rethink my whole mixing method

Was at my grandma's house last Sunday and she told me I'm overworking my banana bread batter. Said I should only stir until the flour just disappears, not until it's smooth like I always do. She's been baking since the 60s and her loaves come out perfectly fluffy every time. So I tried her way with a batch yesterday and wow, the texture was way better. Has anyone else gotten a secret tip from a family member that totally changed how you bake?

Counterpoint: I actually like a slightly overmixed banana bread lol. The smooth batter gives it that dense, almost pound cake texture that holds together better when you slice it. My mom taught me to mix until it's glossy and my loaves come out with a tight crumb that's great for toasting. Not saying your grandma is wrong for fluffy, but different strokes for different folks you know.

This whole thing about mixing methods being this big life changing baking revelation feels a little overhyped. It's banana bread, not rocket science. You stir the flour in, you stop when it looks mixed enough, everyone's bread turns out edible either way. I've made it both ways and honestly could not tell you which was which in a blind taste test. The real secret is probably just making sure your baking soda isn't expired.
