Puff pastry meltdown at 2AM changed my mind about frozen dough
I was making beef wellington for a New Year's party and my homemade pastry turned into a greasy puddle in the oven. After that disaster at 11pm, I grabbed a frozen sheet from the store and it came out perfectly flaky, so now I just keep a backup box in the freezer.

12 hours and a whole roll of paper towels later you're telling me frozen dough is the way to go... guess I've been overcomplicating things this whole time.

@john_johnson75 you're not alone in that paper towel nightmare lol. frozen dough has saved my sanity more than once. pro tip: let it thaw in the fridge overnight on a floured surface. keeps the layers from turning into a sad puddle. also egg wash before baking gives it that shiny look nobody admits they're going for.
