TIL I was overmixing my muffin batter for like 2 years straight
I always wondered why my muffins came out dense and tough instead of fluffy. Then my sister watched me make a batch and pointed out I was beating it like cookie dough. She told me to stop when the flour just disappears and now they actually look like muffins. Has anyone else been doing basic stuff wrong for way too long?

Idk, I mean maybe you were just overcorrecting. Overmixing can wreck texture, sure, but undemixing leaves raw flour pockets and a lumpy mess that's somehow worse. Gotta find the middle ground.
