Was dead against silicone baking mats till I ruined my last sheet pan

I always thought silicone mats were overpriced gimmicks. I've been baking for like 8 years using just parchment paper. But last month I was making a batch of 48 sugar cookies and my last sheet pan got all scratched up from the metal spatula. My friend kept telling me to try her off-brand mat from Amazon so I finally caved and bought a 2-pack for $15. Honestly the cookies came out perfectly even and nothing stuck. Plus I can just wash it instead of tossing paper. Still feels weird not using parchment but the cleanup is way faster. Has anyone else been converted after swearing off something forever?

Yeah, I used to be in the same boat - thought silicone mats were just a waste of money. Then I burnt my hand on a hot baking sheet and dropped a tray of cookies, so I finally gave in and got a cheap set. Honestly, the non-stick factor is legit, and it's nice not having to buy parchment every month.

Heard the exact same story from my friend Jenna last week. She swore by parchment paper for years until she forgot to put it down one time and ruined her brand new baking sheet. Now she's got like three silicone mats and keeps telling me how much easier cleanup is. Is it really that much better than parchment though? I feel like I'd still reach for the paper every time just out of habit.
