Why does nobody talk about using cake flour for cookies?
I used to swear by all-purpose flour for everything. Then last month I tried a batch of chocolate chip cookies with cake flour on a whim and they came out so soft and tender I couldn't believe it. The texture was completely different, like bakery style but way easier. Has anyone else had luck swapping flours on standard recipes like this?

Yo honestly I was the same way for years. I thought cake flour was just for cakes and that using it for cookies was some weird internet fad. But then my sister brought over cookies she made with cake flour and I had to admit they were way softer than anything I ever made with AP flour. So I tried it myself and yeah, it really does change the whole texture. They come out almost like little pillows, not dense at all. I still use AP flour for chewy cookies but for soft ones cake flour is now my go to.

Buddy of mine tried it once and swore he'd never go back to AP flour for cookies.
