My old boss caught me buttering joints and set me straight

He watched me slap mortar on both ends of a block and said, 'you're building a mess, not a wall,' so I switched to just buttering the head joint and it cut my waste by a third that week. Anyone else get told to stop doing something they thought was standard, or was I just learning wrong from the start?
