Why nobody talks about mortar mixing with cold water

I used to mix my mortar with whatever water came out of the hose, didn't matter the temp. After a freeze cracked a wall I built near Dayton last December, I switched to warm water only in cold months. Anyone else run into bond issues from ice cold mix?

Cold water just shocks everything-mortar, concrete, even my will to work outside.
