I finally figured out why my cheap chili was always bland
For years, my chili recipe was just ground beef, a can of beans, and a packet of seasoning. It was fine, but never great. Then, my friend in Phoenix mentioned she sautes a whole diced onion and two bell peppers before adding anything else. I tried it last Tuesday, and the flavor difference was huge. The veggies cost maybe $3 total and they make the whole pot taste richer and more filling. Why did I think skipping that step was saving money? Anyone have other cheap veggie additions that pack a punch?

Try adding a carrot or two, they cook down sweet and make it feel heartier.

You mentioned bell peppers and onion, but have you tried adding a can of those diced green chiles? They're super cheap and add a different kind of warmth that's not just about heat. It really builds a more interesting base flavor.
