I laughed at my neighbor's bean and rice burrito habit until I tried it myself

My neighbor across the hall, Oscar, eats the same bean and rice burritos every Tuesday for dinner. I always thought he was just being stubborn (or cheap, you know?), but last week he handed me one when my fridge broke down. Honestly, it was shockingly good - he uses canned black beans, instant rice, and a squirt of lime juice from one of those plastic limes. I ate three of them that night and now I'm prepping a batch for this week. Has anyone else found a super simple meal you were skeptical of that actually works?

Oscar's burritos sound like prison food, not a legit meal worth repeating.

Yeah "prison food" is harsh but honestly I used to think Oscar's was okay but you kinda changed my mind. I'd go there with coworkers and just shrug it off but looking back those burritos were dry and sad. The rice was always hard and the meat had no flavor. I don't know why I defended them before. You're right, it's not a legit meal worth going back for.
