My wife talked me into trying a lentil loaf and I was so wrong

Okay, so for the longest time I thought a lentil loaf was just gonna be a sad, mushy brick of health food. My wife found a recipe online about six weeks ago and kept pushing for us to try it as a cheap dinner. I finally gave in last Sunday, mostly to stop the debate. We used a can of lentils from the dollar store, some old bread for crumbs, and a bunch of random veggies we had. The whole thing cost maybe $4 total. When it came out of the oven, I was shocked. It held together perfectly, had a great crust, and the flavor was honestly better than a lot of meatloaf I've had. We got two full dinners and a couple lunches out of it. Has anyone else had a budget meal win that totally changed your mind about an ingredient?
