PSA: I stopped buying those pre-cut veggie trays at the store

I used to grab those plastic trays for about $8 each, thinking they saved time. Now I just buy a whole head of cauliflower and a bag of carrots for under $3 total and chop them myself on Sunday. It takes maybe 10 minutes and lasts my family all week for snacks and sides. Anyone have other cheap veggie prep tips that don't feel like a chore?

My grocery store sells bell peppers in a three pack for like $3.50. I slice them all up at once and keep them in a big container. They go in eggs, on salads, or just with some hummus. Saves me from buying those expensive single peppers.
