Shoutout to the $4 rotisserie chicken that fed me for 5 days
Back when I was in college in Kalamazoo around 2011, I grabbed a $4 rotisserie chicken from the grocery store on a Sunday night just because it was marked down. I figured I would eat it for two dinners and be done. Instead I pulled the meat off, boiled the bones into a big pot of stock, and stretched that bird into five days of meals: chicken sandwiches, a stir fry, soup, and a couple quesadillas. I added maybe $6 of rice, onions, and tortillas on top of it. What I learned is that the cheap cooked chicken is often less per pound than raw breasts, and the carcass gives you free broth if you bother to simmer it. Anybody else building a whole week of dinners off one of those birds, and what do you do with the leftovers?
