The real savings come from the cuts of meat nobody wants. After Easter I bought a whole ham for a dollar a pound, ground it with some pork fat, and made sausage patties for breakfast for two months. Those pre-made patties cost four times as much. Ground chuck goes on sale for $2.99 a pound, but I grind whole chuck roasts when they drop to $1.99 a pound and save that dollar every single time.

Heard a butcher say on a podcast that grinding your own meat also lets you control the fat content better.
