A customer in my shop pointed out my pork chop cuts were too thick for quick cooking, said they were 'like little steaks'.

Sounds like they wanted a pork chop, not a pork challenge.

Tell me about it. Saw a place last week serving a "deconstructed pork Wellington" that was just a sad piece of meat next to some cold pastry. Some chefs are trying way too hard.

You see it different though, deconstructed dishes can actually be fun when the flavors still work together.
