Apprentice told me he ages his beef in a vinegar wrap

I overheard a kid at the cooler last week saying he wraps his primals in vinegar-soaked cloth for 10 days to tenderize them. That just sounds like a bacteria farm waiting to happen. Has anyone tried this without ruining a whole batch of meat?

Correct me if I'm wrong but the vinegar wrap is actually an old school method for dry aging in a controlled environment, not just a random internet hack. It works if you keep temps right and use the right cloth, but 10 days seems risky for sure.

Seems like one of those internet hacks that sounds clever until you're tossing out a whole subprimal lol.

Gotta agree @amymason, this whole trend of "hacks" for everything just makes you waste more time and food in the end, like that time people were peeling eggs with a spoon instead of just cracking them.
