Bone saw technique I refused to learn for 10 years, now kicking myself
I always hand-cut rib racks with a knife, thought band saws were for lazy hacks. Last week at the shop in Austin, my apprentice used the saw on a brisket point and the cuts were cleaner in half the time. I watched him do it 3 times, then tried it myself on a pork shoulder, and the difference in bone dust and trim waste was obvious. Now I'm wondering, how many of you older guys hold onto hand tools when the machine does it better, and what finally made you switch?
