Got talked into buying a boning knife I didn't need

Old timer at the shop named Frank told me I had to get a curved boning knife for trimming silverskin off beef. Said it would change my life. Spent $65 on a good one and after 3 weeks I just don't like how it feels in my hand. I keep grabbing my old straight blade anyway. Anyone else waste money on a tool that just didn't click for them?

Start by giving that knife another chance in a different setting. Maybe you are just used to the straight blade for everyday work and haven't given the curved one a fair shot on the right job yet. Give it a real workout on some pork butts or brisket next time and see if it doesn't save you some work.

And a good brisket will teach you more about blade geometry than any video will.
