Got told my pork shoulder trim was too rough by a regular customer
He said the fat cap looked 'hacked at' instead of clean, which made his smoking times way off. I started using a thinner boning knife and taking an extra three minutes per shoulder to really smooth it out. Has anyone else had a simple comment make you change a whole step in your process?

Man, my buddy had the exact same problem last year. His trim was all jagged and looked like someone had taken hedge clippers to it blindfolded. He tried to just even out the top but ended up making it worse because the sides were so uneven. He finally had to cut it way shorter than he wanted just to get a clean line. Took him like three passes over two weeks to get it looking decent again. Definitely a lesson learned about starting with a clean slate instead of trying to patch up a mess.

Honestly it was a mess, super overgrown and uneven. I started by just cleaning up the edges to get a straight line, then worked on the top. What kind of trim are you trying to fix?
