Hit 500 steaks cut in one shift and almost cried

Last Saturday was the busiest I have ever seen our shop. We had three huge catering orders plus the regular walk-ins. I ended up boning out 12 whole striploins and cutting 503 steaks by the end of my shift. My right hand was cramping so bad I could barely grip my knife. I only realized the number when I counted the cryovac bags at close. Has anyone else hit a personal record like that and just felt dead on your feet?

You ever think steak cutting was easy until you hit 500 in a shift?

500 cuts in one shift? That's not bad. Used to do that at a banquet hall on weekends. Just gotta pace yourself and keep your knife sharp. Sounds like more of a wrist endurance thing than anything else. Not exactly brain surgery.
