Hit 5,000 pounds of trim sold last month and it surprised me

I've been keeping track of my trim sales for about two years now, just out of curiosity. Last month I hit 5,000 pounds of beef and pork trim sold to local sausage makers and that's a lot more than I thought I was moving. Anyone else track their trim numbers and get blindsided by the real volume?

Man that's wild, I had the same thing happen with my pork trim a few months back. I was just tracking it for fun, and when I added it all up I was pushing close to 4,000 pounds (and that was just to two local butcher shops). It really sneaks up on you when you're just moving a few hundred pounds a week, then suddenly you're looking at totals and your jaw drops.

Oh man, that reminds me of a buddy of mine who does small batch sausage making on the side. He was just keeping a mental note of the beef trim he was moving to a couple restaurants every week. Nothing crazy, maybe 150 pounds tops. Then he had to do an inventory report for a small business loan application and actually wrote it all down for a whole year. He texted me a picture of the total and it was like 8,200 pounds. He said he felt sick for a second because he never really THOUGHT about it adding up like that. It is such a weird feeling when you see the numbers on paper versus just loading up the truck and going.
