I had a huge order for a wedding in Austin go sideways

The bride wanted a whole hog roast, but the farm delivery was a day late and the animal was 30 pounds under spec. I had to call three other suppliers on a Tuesday morning to piece together enough pork shoulder and belly to make it work. Ended up working 16 hours straight just to get the prep done. Has anyone else had a big catering job almost fall apart like that?

Man, that sounds like a straight up nightmare. How did you even keep your cool when you saw that underweight hog? I can only imagine the panic of those Tuesday morning calls. Sixteen hours is a brutal shift, but pulling it off for a wedding is honestly a huge win. Major respect for scrambling and making it work.

Ngl, backup lists are smart but scrambling is half the fun.

Building a backup list of local farms saved me last time. Just having those numbers ready made all the difference.
