I used to break down a whole hog with three knives, now I mostly use one and a saw
For about six years I broke down every hog with a scimitar, a boning knife, and a breaker. Last Tuesday I did two 250 lb hogs at the shop in Council Bluffs and grabbed the saw for the spine and split, then one 6 inch boning knife for the rest. The saw saves my wrist on the chine and I finish the primals faster. My hands hurt less at the end of the day. Does anyone else lean on the saw more than they used to, or am I just getting old?
