Just realized how much hide quality varies between two farms 20 miles apart

I drove up to a small operation near Lubbock last Tuesday to pick up some sides and the hides were so clean, barely any manure or stones in them. The guy there said his cattle get mostly pasture plus some alfalfa, and he keeps them in a covered pen the night before slaughter. Meanwhile my usual supplier up in Amarillo has dirtier hides no matter what I do, and I end up spending extra time trimming and scraping. Has anyone else noticed a big difference in hide prep between farms, or do you just deal with whatever comes in?

Man, I gotta disagree with the whole covered pen idea. Hides come down to the animal itself and how it lived, not some last minute stall job. Feedlot cattle packed in mud all season are gonna have nasty hides no matter what you do the night before, and alfalfa vs grain doesn't change that much either. Your Lubbock guy just runs a cleaner setup overall, so stop blaming yourself for the Amarillo hides.
