My uncle told me to stop using a boning knife on pork shoulders

He said a stiff 8-inch breaking knife would give cleaner cuts through the joint. I tried it on a whole shoulder last week and the blade got stuck in the gristle twice. Now I'm back to my flexible boning knife and it feels faster. Anyone think the tool choice really matters that much for primal cuts?

Ever try to use a tool that's too fancy for the job? I once tried to carve a turkey with a paring knife. Let's just say it was a sad, stringy mess. Use what works for you.
