Remember when we actually got whole carcasses delivered?

Last week I got a box of pre-portioned steaks and the marbling was all wrong. Miss the days when the truck showed up with a side of beef and I could break it down the way I wanted. Any other old timers miss working whole animals?

Remember opening that first box of pre-portioned cuts and thinking "well, this is convenient but something's gone." There's a real skill to working a whole carcass that just gets lost when everything comes in cryovac packs. You feel much closer to the food when you're the one deciding where the knife goes.

I get what you're saying but honestly I've never felt that way about a box of pre-portioned cuts. For me it's like... the convenience lets me focus on the actual cooking and eating instead of all the prep work. I tried breaking down a whole chicken once and it took me like 45 minutes and I still ended up with jagged pieces that cooked unevenly. My grandma was a butcher's daughter and she always said the skill is in the seasoning and the heat, not in how you swing the knife. The best meal I ever made was Trader Joe's pre-cut stew meat that I just seared off and braised with carrots and wine, and nobody at the table was thinking about where the cow came from.
