Saturday lamb rush nearly broke me, 43 racks in 5 hours
We had a double order from a downtown restaurant plus our regular weekend customers, and I was cutting alone after my apprentice called in sick. Had to rework two whole lamb saddles because my first pass on the frenched racks came out too thin, any of you guys run a solo Saturday like that and live to tell?

The 43 racks thing is brutal but the rework is what kills you, i lost 2 hours once re-frenching a saddle after slicing too deep and ended up just serving it as a mixed grill special. Now i always cut one test rack first thing Saturday before the rush even starts, saves me the panic of fking up the whole batch at 10am.
