Shoutout to the guy at the meat market who told me to stop being stubborn about my trim yield

I spent 3 hours fighting with a tough shoulder clod trying to hit a 70% trim, and it wasn't until I finally used the boning knife he recommended that I got it done in 45 minutes flat, has anyone else had a tool swap save them that much time?

Funny how the right tool can make you feel like an idiot for not using it sooner. I had a similar moment with a pair of kitchen shears for opening stubborn lobster claws. Sometimes you just gotta admit the knife was right all along.

Ugh, tell me about it, @linda305. I spent a whole summer fighting with a box cutter on some tough packaging, twisting my wrist like I was opening a pickle jar with a butter knife. Then my buddy hands me a $12 pair of snips and I'm done in two seconds. Felt like the universe was laughing at me, honestly. Still, I refuse to throw out the box cutter, it's a pride thing now. πŸ˜…
